Beetroot, Orange and Cos Salad
Amount Name
2tbsps Extra virgin olive oil
1tbsp Orange juice
20grams Baby cos lettuce
100grams Orange peeled, chopped
1x 100g each Carrot, peeled, grated
0.25cups Walnut pieces toasted
0.25cups Curly parsley
450grams Beetroot sliced
100grams Goat cheese
Method:
1. Combine oil and orange juice and season with salt and pepper
2. Mix cos lettuce, orange, carrot and sliced beetroot together.
3. Add the walnut pieces, goat cheese, parsley and mix with the dressing to combine.
