Sticky Date Pudding With Butterscotch Sauce

200grams Chopped dates
2.5grams Baking soda
1.25cups Boiling water
60grams Salted butter
150grams Soft brown sugar
2 each Eggs
125grams Self rising flour
300grams Brown sugar
250ml Cream
50grams Salted butter
5ml Vanilla essence
Method:
1. Preheat oven to 180*c conventional or 160*c fan-forced
2. Grease a deep a loaf tin. Line base with baking paper.
3. In the large bowl combine the dates, baking soda and boiling water, stand for 5 minutes.
4. Add butter and soft brown sugar and stir until combined.
5. Add eggs and flour, mix until just combined. pour mixture into prepared tin. bake 45-50 minutes or until cooked through.
6. Stand for 10 minutes before turning out of tin.
7. slice and serve warm with hot butterscotch sauce poured over the top.
Butterscotch sauce:
Combine all ingredients in medium sized pan, stir over low heat until sugar is dissolved and butter melted.
